How about a sim for a combat form independent from MMA such as kickboxing, muay thai, sambo, boxing (as another individual suggested), jujitsu, karate, street fighting, etc?

WMMA with editing options will basically give you this. Simply have the option to not allow takedowns or clinching will make it a stand up or kick boxing company. If you dis allow kicks, it will make it a Boxing company.
