What would you guys recommend for a number of fights for a ppv/fight night card including prelms.
I usually book between 7 or 8 fights overall, im using a real world mod and the ufc has such a big roster would booking 8-11 fights affect the show rating? or does that all depend on the quality of the fights and not the quantity.

It all depends on the quality of the match-up the number of which does not effect the show poularity.

With the UFC on TOS, fill the card out, otherwise not everyone will get to fight on your roster. Smaller promotions like Strikeforce and DREAM have to be more conservative. In my epically long Strikeforce game I played 1 and a half years just booking 5 fight cards because my roster was very small at the time. Now I have a huge roster I always put on 10 fight offerings.

I used to book 20 fights per card but now I book 18 so I don't have to scroll up or down to see my other fights.

It depends. Early on I book 4 main card fights and 2-4 prelims. Later on when I'm more established I put on 5 main card fights and 5+ prelims. No more than 8 though, I think it gets a bit ridiculous after that.

It depends on the size of the roster I usually have 150-175 fighters on my roster, so I like 13-15 fights (5-7 over-6-8 under) every 3 weeks. This allows my fighters 3 fights a year fairly comfortably.

I use 5 mains and 6 prelims. 3 TV fights and 5 prelims, works like a charm.

If you play the UFC, why not book like the UFC? 5 main fights and 5 prelims. 12 events a year plus the occasional TV show (I'd take 2 tv shows), where there's 4 matches and 3 prelims or something similar.
But if you want to have more fights, then go ahead. It won't cost you anything but extra money. But i'm sure the UFC has plenty. :p

I try to book 5 matches on the main card and three to four prelim matches. All though I am thinking of changing that when I work with smaller promotions.

Dana has said in the past he'd like to do 24-32 events this year, so we'll see, and its 11-12 fights now per card. 10 for FN's
