2 Suggestions: Booking without cards + Assisted matchmaking
Structuring a balanced card is something I always struggle with. Normally I have a spreadsheet open filled with matches I want to book ranked by importance and how popular the fighters are. I have to consult this when booking a card to make sure I don't put all the good matches on one card and have none left for the next. But it could be made so much easier.
In reality, matches are often booked without an announced event. What would be nice is a feature that would allow you to book fights on one screen and then assign them to events once you've decided where it is going. This also saves time removing a fight from a card because you've decided it would fit better elsewhere.
Another few suggestions relates to booking. In a big UFC games with 50/60 fighters per division it is pretty much impossible to keep track of where each fighter stands. Once again, I use a spreadsheet for this, but it could be made easier by having an in-game "ladder" that tracks momentum and win/loss streaks - I know there are rankings, but it isn't always helpful, a formerly-high profile fighter out of the spotlight because of a couple of losses shouldn't be paired with a guy on his way out of the company because of a loss streak in the prelims, and a young guy ranked #20 because of a win streak isn't realistically at the same level as an unranked veteran fighter who has been consistently fighting the best.
It might also be helpful for the assistant to suggest good matches for fighters, much in the same way the road agents suggest how wrestlers should be used in TEW. Speaking of which, a feature that would auto-book the prelims would be very useful for the super lazy (like me sometimes) who cannot keep track of the prelim fighters progress. Though that might be a headache to pull off properly as I can foresee two prospects you want to protect being put together or big fights being high-ranked unknown fighters being wasted.
