Is there a way to "force" a wrestler to retire from the game and go to another role or does this just have to happen automatically?

You can use the in-game editor to retire people easily enough. Just go to Game Option -> Edit Data -> worker -> and then play around with things. You can change their active status to retired (make sure to change their contracts to) and set the roles you want them to have OR you can do it more organically by reducing a body part's health below 25 (might be 30) and they should retire the next day due to injury, which will set them up with some new roles automatically.
